Why do we love it?

Yes, this moment has finally arrived. We counted days for this wine to be ready. Don't expect anything less than the top. Its future is almost predetermined and the winemaker's signature is simply the confirmation that the level is high. Of course with Apostolos, you never know how much higher it could be!

The disruptive winemaker from Naoussa created a frenzy with his reds, but his penchant for aging rosés also made it clear that whatever he decides to do, he takes it to the extreme. And that's what he did with Blanc de Rose.

Blanc de Rose Cuvee R comes from organically certified vineyards located in the village of Fytia. The altitude of 500 meters and the cool breezes during the ripening period of the grapes, ensure the excellent quality and the preservation of the finesse of the fruit. And now the good stuff begins...

A portion of Xinomavro intended for Rose de Xinomavro (which if you haven't tried it already run) remained for 6 full years in contact with its fine lees. Then 1.5 tons of it was removed and replaced by whole bunches of Malagouzia, while the rest was transferred to oak barrels. The fermentation of Malagouzia with the rosé wine that had already been produced lasted a total of 3 years in stainless steel tanks and after its completion, it remained for another 2 years in contact with the lees. After bottling, it spent another 2 years in the bottle and is finally available to drink! And in case you are wondering, yes, this is also an aging wine and in 10 years it will be just as disruptive!

Tastes Like

In the glass is deep lemon with pink notes. Rich aromas of strawberry jam, peach and quince. Honeysuckle and vanilla are noticeable and flanked by caramel and brioche dough.

In the mouth it is full of volume, with crisp acidity and a slightly oily texture. Peach compote, caramel, white-fleshed peach and sun-dried tomato, in a very special and slightly spicy combination, which floods the palate and lasts a long time.

PAIR IT

Try it with salmon with ginger and lime, linguini with shrimp, traditional chicken with baked potatoes, but even with pizza.

Quinoa salad with avocado and bell peppers

  • 1 cup quinoa
  • 2 cups of water
  • 1 cup of red and green bell peppers cut into cubes
  • 1/2 ripe avocado cut into thin slices
  • 2 tbsps. of onion finely chopped
  • 2 tbsps. of lemon juice
  • 2 tbsps. of fresh oregano
  • Salt
  • Black pepper
  • Balsamic cream

Boil the quinoa in a small pot and once the water boils, lower the heat and let simmer until it absorbs all the water (about 10 minutes).

Let the quinoa cool down.

Add all the ingredients except avocados to a bowl and mix well.

Garnish with 5-6 slices of avocado and serve with balsamic cream.
