30 km from the Spanish border and just 5 km from the Mediterranean seaside is the vineyard that makes this extremely great wine, the Cool Moon! Domaine Les Enfants Sauvages means "Winery of Wild children», and as their name implies, they are uncompromising, young, and energetic winemakers who see things a little differently.
Biodynamic cultivation, respect for the land and the environment, the use of indigenous yeasts rather, result in the creation of wines that perfectly reflect the terroir and the character of each variety! Cool Moon 2016 is a blend of Grenache Blanc, Grenache Gris, Maccabeu, and Vermentino, with the first 3 coming from old vines, 90 years old! The blend is fermented and matured in foudres (1200 liters) of oak and acacia for 12 months. Then a minimum amount of sulfites is added and no other human interference or filtration takes place.
The result is a perfectly balanced and impressively complex wine!
