Why do we love it?

When you are one of the largest wineries in Greece and one of the oldest, with a history since 1879, experimentation is something you can do and you owe it to yourself. And experimentation is in the dna of the Boutaris Winery.

The natural winemaking, without sulphites, has always been a challenge. There are so many things that can go wrong when you do not interfere ... At Mantineia's winery, as it was natural, they experimented with the production of a white Moschofilero wine without sulfur.

You may have stumbled upon the Experimental Moschofilero Boutari at some exhibition. You may have tried it. If you have, you probably were thrilled by it and if you look into your notes, you probably have written something good with many exclamation marks about it.

Think of the fresh, lemony aromas of Moschofilero having acquired an unexpected depth, duration and multi-level character that expresses both the variety to the fullest and the best possible evolution it can have.

The Experimental Moschofilero 2020 of the Boutaris Winery is one of the wines that, no matter how long we describe it, we cannot give you the whole picture. You will have to try for yourself.

Tastes Like

Moderate lemon with orange shades. From its unique color in the glass you understand it is a completely different wine from what you have tasted.

Intense nose, expressive, with notes of kiwi, sweet orange, apricot, sour orange and dried flowers. Bay leaves, sage, paprika, cardamom and ginger create a really complex bouquet.

The mouth is stylish with low alcohol, moderate body and sharpness but really high aromatic intensity. Party of aromas here as well with guests being candied orange peel, apricot jam, quince, sunflower, nutmeg, cardamom, ginger, malt and toast. Endless aftertaste in a wine of aromatic explosions.

EXPERIMENTAL MOSCHOFILERO 2020 - BOUTARIS WINERY

PAIR IT

Pair with a mushroom risotto, a grilled oily fish or even pork with lemon sauce.

Kakavia (fish soup)

  • 1200 g small fresh fish for soup (tip: use different fish)
  • 250 g potatoes
  • 2 medium sized onions
  • 100 ml of olive oil
  • 2 lemons
  • Salt, preferably sea salt
  • 6-7 black peppercorns
  • A little hot chili pepper (optional)

First gut the fish and remove the scales. Cut the potatoes in a symmetrical way and slice the lemons.

Saute the potatoes in a deep pot with olive oil. Score the onions slightly from the underside and pour them into the pan stirring for 2-3 minutes.

Pour in the juice of one lemon. Add a little salt, pepper, chili pepper (optional), pour 600 ml. water and allow the mixture to boil for about 8-10 minutes.

Then place the fish in the pot and simmer for about 10 minutes without shaking.

Remove the pot from the fire, pour in the juice of the other lemon and shake the pot carefully to prevent the fish from crumpling. Let the soup cool down for 10 minutes before serving.

At a platter serve the fish with the potatoes and onions and season them with olive oil. Serve the soup in deep dishes.
