Why do we love it?

Glinavos’ Fine Debina comes to complete the first trio of Apostolos Thymiopoulos’ wine debut in Zitsa! It is an ultra-elegant white wine that highlights Zitsa’s unique indigenous variety, Debina, vinified in the signature style we’ve come to expect from Apostolos. The man is a magician — everything he touches turns to gold… and becomes fine!

Apostolos never stops seeking new experiences in the world of wine. For years, he studied the field of sparkling wines, and when the opportunity arose for him to work in Zitsa (the most historic sparkling-wine region of Greece), he didn’t let it slip away. He invested in Glinavos winery and its high-altitude organic vineyards, recognizing in Debina a variety with remarkable potential, while also opening his horizons to the full spectrum of wines it can offer. He kept the winery’s name as a tribute to Glinavos and its legacy, but added his own personal touch.

For Glinavos’ Fine Debina, the wine fermented in stainless-steel tanks with indigenous yeasts at controlled temperatures. It then spent 10 months on the lees, which enhanced its body and added an elegant, creamy texture and aromatic complexity. Without complicated winemaking techniques, Fine Debina lets you experience the pure typicity of the variety and the terroir of Zitsa — all while Thymiopoulos’ expertise is clearly evident in the final result!

Fine Debina proves once again that Apostolos excels not only in reds but in whites as well!

Tastes Like

On the nose, it shows refined aromas of green apple, pear, citron, and bergamot, accompanied by hints of dough and subtle notes of chamomile and sage.

On the palate, it has medium body, crisp acidity, and a creamy texture. Lemon, citron, grapefruit, pear, dough, white flowers, and mineral touches create a complex and refined bouquet.

FINE DEBINA 2024 - GLINAVOS

PAIR IT

Pair it with fried small fish, shrimp-and-saffron risotto, or herb-and-cheese pie.

Steamed mussels with turmeric

  • 700 g mussels
  • 1 green onion, chopped
  • 1 Garlic, chopped
  • 1 tsp.  turmeric
  • 1 glass of white wine
  • Olive oil
  • Salt (Optional)
  • Pepper

Wash the mussels under plenty of water, removing the sand and seaweed and thoroughly cleaning the shell.

Saute the onion and garlic and add the mussels. Then add 1 tablespoon sweet turmeric and one glass of wine. Let the alcohol evaporate a little and cover the pot to boil for 5'-6 '.

Agitate the pot, remove the cover and serve on a deep dish.

Add freshly ground pepper (salt is optional) and garnish with a sprig of fresh thyme.

TIP: During the wash, throw the open mussels. After cooking,  throw the closed mussels.
