If you want your white wines overflowing with fresh fruit and flowers, you should better take a look at something else. Have you ever tried an oaked Chardonnay? If you liked it, then Savvatiano Fume 2014 Markou Vineyards is certainly a candidate to become your next favorite white!

Get ready to love a wine with enviable complexity and depth! The Savvatiano Fume 2014 Markou Vineyards of Mark is an exemplary Fume white wine of the varietal Savvatiano, and the biggest surprise we had for some time. Elegant, velvety and smoky in flavor and aromas, it will satisfy the most demanding and delicate palate.

It is an experimental wine from selected vineyards with very low yields. The scarce juice remained in intense burning French oak barrels for 10 months. It was bottled in just 1.000 bottles and a few weeks later, less than half remains, making it one of the "worst" kept secrets of recent months.

You are probably thinking that this does no sound very summery. You are right, but keep in mind that it will be very hard to find something better to escort a fatty grilled fish. If on the other hand it's hard to part with your favorite red wines in the summer, this is as close as you can get.

We'll take a few bottles with us on holiday but will definitely keep some in the cellar for aging for another 3-5 years. Everything indicates that it will evolve very beautifully.

Impressive golden color in the glass.

Even before you approach the glass, you will be delighted by rich, ripe aromas of tropical and stone fruit, soaked in smoke and honey. Banana, papaya and coconut are combined with quince, peach, apricot and vanilla. Bergamot, ripe medlar and lemon zest appear as the wine breathes. Honey, honeycomb, hazelnut and cigar smoke express the barrel’s touch which although intense, it is masterfully integrated without covering the fruit.

Rich mouth, full-bodied, with a buttery feel and balanced acidity. The wood and tobacco dominate while banana and mango assert their place in the culinary palette. Ripe pear, peach, melon and nuts make their presence felt if you keep the sip in the mouth before swallowing, with nuts remaining in the good-length aftertaste.

Pair it with grilled sea bass with spicy sauce, grilled chicken or smoked pork steaks

Salmon burger

  • 1/2 kg fresh salmon fillet without skin and bones
  • 1/3 cup of bread crumbs
  • 1 tbsp of Dijon mustard
  • 2 tbsps grated Parmesan cheese
  • 2 cloves of garlic, finely chopped
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 1/2 tsp. onion powder
  • 1/2 tsp. of paprika
  • 2 tbsps. barbecue sauce
  • 4 whole wheat bread rolls for burger

Chop the salmon into small pieces, put it in a bowl and mix it with your hands until it becomes somewhat homogenized.

Add all other ingredients except buns and mix well with a spoon until they are well mixed. Make 4 equal sized burgers.

Heat a pan (or grill) in medium to high heat and cook the salmon burgers by turning them until golden - about 3-4 minutes per side.

Remove from the fire, place the burgers on the rolls and serve with extra BBQ sauce, lettuce and onion.
