The unstoppable and inventive Jason Ligas with the magic stick of permaculture* transforms perhaps the most promising Greek variety, Kydonitsa. Jason is constantly experimenting with new techniques based on mild natural vinification. Kydonitsa Barrique 2018 ferments with ambient yeasts and matures in old, large, oak barrels for 8-12 months. It is unfiltered and the result is as exuberant and engaging as Katina Paxinou was.
