Why do we love it?

The great lady of the theater, Katina Paxinou, adorns the label of Kydonitsa Barrique 2018 from Ktima Ligas. The introverted, great actress who was transformed on stage fits perfectly with the shy Kydοnitsa which, in the right hands, can do great things.

The unstoppable and inventive Jason Ligas with the magic stick of permaculture* transforms perhaps the most promising Greek variety, Kydonitsa. Jason is constantly experimenting with new techniques based on mild natural vinification. Kydonitsa Barrique 2018 ferments with ambient yeasts and matures in old, large, oak barrels for 8-12 months. It is unfiltered and the result is as exuberant and engaging as Katina Paxinou was.

Such a diamond could only be bottled in a strictly limited number of bottles, and of the 3 Barrique wines of the winery it is always the first to run out!

*Permaculture takes its name from permanent agriculture and refers to a way of cultivation that ensures a sustainable production life cycle. In simple terms, the cultivation of the vine does not compete with nature but cooperates with her to achieve sustainability and viability of the environment.

with pork with quinces, salmon with orange sauce and turkey stuffed with dried fruit.

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
