Why do we love it?

The distinct, emblematic and chic label of Lamda Assyrtiko Barrique 2018 from Ktima (domaine) Ligas, with Maria Callas on it, is in perfect harmony with the complex and impressive content of the bottle. The symbolism behind this choice is that as Callas lived and excelled abroad, Assyrtiko is also making a brilliant international career.

Behind this wine lies the unstoppable and inventive Jason Ligas. Jason constantly experiments with new techniques based on mild natural vinification. His philosophy is summarized in the following: permaculture*, no interventions in wine, no sulphites or commercial yeast added. Lamda Assyrtiko Barrique 2018 is an Assyrtiko that ferments with indigenous yeasts and matures in old, large, oak barrels for 8-12 months. It is bottled unfiltered and the result is exuberant, velvety but also elegant as it was the voice of Maria Callas.

Such a diamond could only be bottled in a strictly limited number of bottles (just 2000), so if you have not tasted it yet, now it's the time!

 

*Permaculture takes its name from permanent agriculture and concerns a way of cultivation that ensures a life cycle. In simple terms, the cultivation of the vine does not compete with nature but works with her for the purpose of sustainability and viability of the environment.

Tastes Like

It has moderate lemon color with golden hues.

Complex nose with candied lemon peel, citron, honey, sourdough bread, orange and mineral scents, reminiscent of flintstone.

On the palate, it has medium to full body and crisp acidity. Intense citrus notes such as lemon, citron, grapefruit and orange meet honey and mineral hints. Aftertaste that lasts until the next sip.

The philosophy of Ligas’ family, is based on the principles of permaculture/organic farming, where local varieties give their best and purest expression.

PAIR IT

with grilled fish, oily fish, seafood or chicken dishes with white sauces.

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
