Nostos Muscat of Spina Orange from Manousakis Winery is not just another orange wine. Made from Muscat of Spina grown in Chania, it fully embraces the aromatic intensity of the variety, delivering extra depth, structure and complexity. An orange wine for devoted fans of the style—but also for those looking to explore the world of skin‑contact wines through a more approachable expression.

When Theodoros (Ted) Manousakis returned from the United States, he decided to devote himself to winegrowing. Leaving nothing to chance, and working with an internationally respected scientific team, he selected the most suitable grape varieties for the slopes around Vatolakkos, Chania, based on detailed soil and climate studies.

Nostos Muscat of Spina Orange Manoussakis Winery comes from own‑rooted vines at 650 metres above sea level. This altitude produces grapes with highly concentrated aromas while preserving vibrant acidity. The harvest takes place at full ripeness, further intensifying the aromatic profile. In the winery, they apply skin contact for around 14 days, resulting in deeper colour and greater intensity. The wine then matures for 8 months in old French oak barrels before being bottled in truly limited quantities.

Tastes Like

In the glass, Nostos Muscat of Spina Orange Manoussakis Winery offers striking aromas of orange peel, rose, dried citrus fruits and apricot, along with mandarin marmalade and candied bitter orange. Dried flowers and sweet spices add further complexity in the background.

On the palate, it is full‑bodied, with vibrant acidity and a light tannic grip. Subtle notes of bitter orange peel are beautifully balanced by dried and cooked fruit flavours that dominate the profile.

PAIR IT

Pair it with duck in orange sauce or sweet‑and‑sour pork served with five-spice rice.

Sweet and sour chicken with fresh peas and peppers

- 500 gr. chicken breast
- 200 gr. peas
- 250 gr. heirloom peppers
- 3 carrots
- 2 cloves of garlic
- 1 onion
- 50 gr. fresh ginger
- 2 spring onions
- 40 ml soy sauce
- 1 tablespoon honey
- 1 teaspoon of corn flour
- 30 ml olive oil or sesame oil
- 250 ml of vegetable broth
- Freshly ground pepper
- Salt
- Coriander or parsley
- 1 lime

Start by cutting the chicken into bites. Then put it in a bowl, add garlic and grated ginger, soy, corn flour and marinate for 30΄.

Cut peppers, carrots and onion into strips.

In a wok or in a large and deep pan, heat up the olive oil, saute the vegetables and peas for about 10 minutes until they soften.

Add the chicken with its marinade and continue sauteing for another 3-4 minutes.

Add honey, chopped onions, broth, pepper and season carefully since soy sauce is salty. Simmer for about 20 minutes, until the sauce sets and remove from the fire.

Serve with chopped coriander or parsley and lime.

Notes on the recipe
- We can add any seasonal vegetable that we like such as zucchini, green beans, etc.
- If we do not want to use chicken we can replace it with mushrooms, especially with shiitake that go very well in this recipe.
