Why do we love it?
“Nassitis” means islander in the Doric dialect spoken by the first inhabitants of Santorini after the cataclysmic volcanic eruption. Vassaltis Nassitis is, quite literally, a local islander: a harmonious blend of Santorini’s three native white varieties — Assyrtiko, Aidani and Athiri — created to capture the essence of the island of black stone. It is the perfect companion to a journey across Santorini, whether imagined or real, bringing volcanic landscapes, sea breezes and sun‑drenched days straight into your glass.

Aidani, Athiri, and Assyrtiko are vinified separately. They meet and each variety has to say her own. Like friends having to see each other for a long time. Elegance, liveliness, acidity, "minerality", fruit and flowers are the first they talked about. They had a whole lot more to share.

Tastes Like

Nasitis Vassaltis has moderate aromatic intensity with tropical fruits competing with the white slices. Mango and pineapple meet apricot and peach in a great combination. Lemon blossom and daisy complement the mineral feel of the island that is all over the glass.

Medium (+) body with playful mood. The marked acidity is balanced beautifully by the lively, ripe fruit. Peach and pineapple dominate with apricot and lemon following. The long-lasting aftertaste leaves a fruity feeling that remains for quite a while.

Vassaltis Vineyards
Vassaltis Vineyards is the newest winery in Santorini and was created by the youngest producers and is located in Vourvoulos area on the road to Oia. A name inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini, the winery is now ready to produce great wines and carve out its own history.

with Santorini fava, fried anchovies, or green salads with fruit.

Kakavia (fish soup)

  • 1200 g small fresh fish for soup (tip: use different fish)
  • 250 g potatoes
  • 2 medium sized onions
  • 100 ml of olive oil
  • 2 lemons
  • Salt, preferably sea salt
  • 6-7 black peppercorns
  • A little hot chili pepper (optional)

First gut the fish and remove the scales. Cut the potatoes in a symmetrical way and slice the lemons.

Saute the potatoes in a deep pot with olive oil. Score the onions slightly from the underside and pour them into the pan stirring for 2-3 minutes.

Pour in the juice of one lemon. Add a little salt, pepper, chili pepper (optional), pour 600 ml. water and allow the mixture to boil for about 8-10 minutes.

Then place the fish in the pot and simmer for about 10 minutes without shaking.

Remove the pot from the fire, pour in the juice of the other lemon and shake the pot carefully to prevent the fish from crumpling. Let the soup cool down for 10 minutes before serving.

 

At a platter serve the fish with the potatoes and onions and season them with olive oil. Serve the soup in deep dishes.
