Pata Trava is one such wine that plays with the limits and possibilities of Xinomavro. In essence, its name derives from the way grapes and must are managed: they immediately press the grapes and pull the must so that it does not get any color or tannins. The wine fermented in stainless steel tanks, with ambient yeasts and the result is at least impressive and uniquely complex.
