Why do we love it?

Is Pata Trava Ktima Ligas a rose, white or orange wine? We should tell you that it is a little of everything and in addition a delicious, complex and gastronomic wine that does not like labels.

Experimentation is synonymous with Ligas family. They take the Greek varieties and are constantly experimenting with new winemaking techniques but also with their "limits". Their philosophy in wine can be summarized as follows: permaculture *, zero to minimal interventions in wine, no sulfites, no commercial yeasts.

Pata Trava is one such wine that plays with the limits and possibilities of Xinomavro. In essence, its name derives from the way grapes and must are managed: they immediately press the grapes and pull the must so that it does not get any color or tannins. The wine fermented in stainless steel tanks, with ambient yeasts and the result is at least impressive and uniquely complex.

*Permaculture took its name from permanent agriculture and concerns a way of cultivation that ensures a sustainable life cycle. In simple terms, the cultivation of the vine does not compete with nature but works with it for the purpose of sustainability and stability of the environment.

Tastes Like

Pata Trava Ktima Ligas has bright pink color with orange hues and exuberant aromas of citron, bergamot, tomato jam, quince, orange and dough.

In the mouth it has moderate body, light tannins and pronounced acidity. Juicy citrus fruits, quince, toast, tomato and honeysuckle compose a complex bouquet.

PAIR IT

Perfect pairing with salmon with orange, pork tenderloin with sundried tomatoes and parmesan, shrimp pasta

Casarecce with tomato sauce and tuna

300 gr. Casarecce pasta
150 gr. tuna in olive oil
1 onion
2 cloves garlic
1 green pepper
3 ripe tomatoes
1 teaspoon tomato paste
1 small cinnamon stick
1 clove
1 bay leaf
40ml olive oil
Fennel
Freshly grounded pepper
Salt

1. Chop onion, pepper and garlic into small pieces. At the same time, grate the tomatoes in the grater and boil the pasta in salted water.

2. In a frying pan, sauté in olive oil the onion, garlic and pepper for 3 ′. Then, add the fresh tomatoes, tomato paste, spices, bay leaf, salt and pepper.

3. Simmer the tomato sauce over low heat and just before it thickens up, add the tuna and the pasta. Mix well and remove.

4. Serve with chopped fennel and grated barley rusk.


Recipe notes:

-We can add a splash of ouzo, 1 tablespoon is enough
-If we do not want to use fresh tomatoes, we may use 300 gr. tomato juice or concasse
-We can add some cherry tomatoes cut in half towards the end of cooking
-We use the shape of the pasta we like, this sauces tastes better with pasta that do not contain egg
