Why big bang? Because it is the most elaborate sparkling wine you will ever taste. Its refined foam will create explosions! It's the Pet Nat Amphora - Anatolikos Vineyards!

The Assyrtiko and Malagouzia varieties used for this wine come from dry vines, just 3 kilometers from the sea, in the area of Choirodasos, in Avdira, Xanthi. The sandy hills with stony subsoils and cool sea breezes provide the best basis for the mineral and rich character of Assyrtikos.

Nikolaidis brothers, who are always in a great willingness to experiment, have once again unfolded their talent! At Pet Nat, the cryo-extraction method was initially applied, which in simple words means that the aromas and taste of the wine have gone through the ceiling! Fermentation followed, in a clay amphora with native wild yeasts, and the wine was bottled unfiltered before it was complete. The completion of the fermentation took place in the bottle and this gives it a completely different character!

Tastes Like

In the glass it is a cloudy pale gold with a distinct light fizz.

Nose with strong aromatic intensity and predominantly the aromas of white fleshy fruit flowers, mainly peach. Intense mineral aromas, stone, chalk and limestone. Unique notes of dough appear, such as bread crust and brioche, but also aromas of spices, such as black pepper, with a soft touch of herbs, mainly white tea.

In the mouth it is of moderate volume with high acidity and very intense mineral elements. The aromas of the nose follow more strongly, with juicy white-fleshed peaches and hints of spices. Its intense and particularly refined foam creates a rich and delicious result, with a long and fruity aftertaste.

PAIR IT

Perfect pairing with shellfish and seafood, but also with a plate of mature cured meats and cheeses.

Quinoa salad with avocado and bell peppers

  • 1 cup quinoa
  • 2 cups of water
  • 1 cup of red and green bell peppers cut into cubes
  • 1/2 ripe avocado cut into thin slices
  • 2 tbsps. of onion finely chopped
  • 2 tbsps. of lemon juice
  • 2 tbsps. of fresh oregano
  • Salt
  • Black pepper
  • Balsamic cream

Boil the quinoa in a small pot and once the water boils, lower the heat and let simmer until it absorbs all the water (about 10 minutes).

Let the quinoa cool down.

Add all the ingredients except avocados to a bowl and mix well.

Garnish with 5-6 slices of avocado and serve with balsamic cream.
