Dimitri Mesnard is a Master Sommelier that comes from the Loire valley and specifically from the village of Quincy. When his grandmother died, about 10 years ago, she bequeathed to him a small piece of land. Dimitri then decided that he did not want to lose touch with his roots and so he returned to Quincy and started buying plots of land in order to plant his own vineyard and make his own wine. Ten years later, he did it! Quincy may not have the reputation of a Sancerre but it has historical significance as it was Loire's first AOC (the region's dynamics were recognized early on)!

Quincy Quartz par Dimitri Mesnard took the name quartz from the soils of the area that are rich in quartz and clay. The special soil composition is responsible for the special aromatic profile of this Sauvignon Blanc. At the same time, the careful vinification at low temperatures further enhanced the fruity aromas of the variety. The result is juicy, elegant and combines green fruits with the herbaceous aromas of the variety!

Dimitri Mesnard says there is a myth that witches lived in the area. Is that why Quincy Quartz enchants anyone who tries it??
Tastes Like

Quincy Quartz - Dimitri Mesnard has a pale lemon color with greenish hues. Aromatic nose with notes of pear, green apple, lemon, grapefruit, peach, white flowers, grass, and fig leaf.

In the mouth, it has a medium to light body and refreshing acidity. Green apple, lemon zest, cherry plum, grapefruit, peach, orange blossom, white tea, and green pepper fill-up the mouth in every sip.

PAIR IT

Pair it with goat cheese, risotto with peas and lemon, or salmon with asparagus and hollandaise sauce.

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
