San Ta Maratha 2019 of Syros Winery has arrived and you‘d better put several bottles in your cellar because you know how fast it runs out every year! Yes, Assyrtiko is undoubtedly the protagonist of the wine scene and Santorini does not have the exclusivity anymore. Syros has entered the game for good!

Every year Nikos Hatzakis places the following personal bet: in how many months will San ta Maratha be sold out this year? The talented oenologist and producer, behind the boutique Winery of Syros, has dedicated himself to highlight both Assyrtiko and the special terroir of Syros. After so many years we can say that he has succeeded since he convinced many others, winemakers and wine lovers, to see Syros from a different point of view. With dedication and passion from the vineyard to the bottle, he has created a crisp, fruity white wine with notes of minerality, typical for the variety, which definitely carries the cosmopolitan air of Syros. As Santorini's wines raise their prices, San Maratha will remain the most affordable and typical expression of Assyrtiko.

One sip and you're in Delfini, Syros, eating fennel pies and fried little fish. Pure magic!

Tastes Like

It has pale lemon green color and elegant aromas of lemon, lime, grapefruit, bergamot and white peach. Savory notes emphasize the variety’s mineral character. Delicious mouth with medium (+) body, crisp acidity and oily texture.

with pasta with seafood sauces, fried fish or chicken dishes.

Fennel fritters

  • 1 bunch of fennel
  • 1 large onion
  • 20 ml. Ouzo
  • 150 gr. flour for all purposes
  • 1 tsp. of sugar
  • ½ tsp. of soda
  • 1 tbsp. of vinegar white
  • 130 ml. water
  • Salt
  • Pepper
  • Olive oil for frying

Chop the fennel and the onion and mix all the ingredients together in a bowl. Put the olive oil in the pan to heat up and add one by one, spoonful of our mixture. Fry them on both sides until golden brown. Serve hot.
