Why do we love it?

A new Santorini is always a new Santorini. Rebellious, explosive, full of aromas and flavors of a landmark variety of for the Greek vineyard and an island full of character.

Call them speculative or visionaries, three young men, John Valampous, Elias Roussakis and John Papaoikonomou, ventured into the Greece of crisis to invest money and countless personal effort on an island whose vineyards are continually shrinking in favor of tourism development.

One of the newest wineries in Santorini returns with its fourth year of production Assyrtiko which is already established among the best on the island. With a name inspired by the black volcanic rock formed by the cooling of the basaltic lava that has covered the island of Santorini after the eruption nearly 4,000 years ago, Vassaltis Winery is now ready to make great wines and to host the countless visitors of the island.

Very different from the 2015 vintage, Santorini 2019 Vassaltis Vineyards lets both the island and Assyrtiko, take the absolute leading role. The alcohol this time is in the normal levels of the island (due to favorable weather conditions) while the very low yield not exceeding 150-200 kg/ha ensures condensation of the fruit. The stay on the lees for 6 months with regular batonnage, added volume, and complexity, making one extremely enjoyable Santorini with prominently long aging potential. Rich and exuberant, it integrates seamlessly around the island's mineral character rightfully claiming a place among the big names.

Tastes Like

Straw yellow color with greenish reflections in the glass.

On the nose evolutionary aromas of unripe yellow fruits and citrus on a background of diffused minerality. Peach, citrus and grapefruit aromas are accompanied by wet stone and flint.

In the mouth, rich, with creamy texture and intensity that awakens the palate. The pronounced acidity adds nerve while hints of honey make the citrus fruit sweeter in the mouth. The long-lasting aftertaste leaves the fruit on the palate along with a tasty salty finish.

Shrimps with peas and ginger

  • 3 tbsps. of olive oil
  • 300 grams of mushrooms cut into four
  • 1/3 cup of peas
  • 8 large shrimps peeled
  • 1 tsp. grated ginger
  • 3 tbsps. of soy sauce
  • 1 tbsp. vinegar of white wine

Heat 2 tablespoons of olive oil in a pan, on high heat. Add the mushrooms and let them soften by stirring, about 5 minutes. Remove them from the pan and put them on an absorbent paper.

Add the peas to the pan and cook by stirring for about 2 minutes. Remove them from the pan and put them along with the mushrooms on the absorbent paper.

Add 1 tablespoon of olive oil to the pan. Then put the shrimps and chopped ginger in the pan. Reduce the heat to moderate and cook until the shrimp becomes opaque, about 4 minutes.

Return all vegetables to the pan, add soy sauce and white wine vinegar. Cook until they are warm enough, about 4 minutes.
