The blend is traditional and aromatic, composed of 90% Assyrtiko and 10% Athiri and Aidani. The grapes are sourced from the villages of Pyrgos, Exo Gonia, Fira, Akrotiri, Emporio, and Megalochori. Each variety — and each village — is vinified separately, with the final blend adjusted according to the specific character of each vintage. The wine matures for five months on its fine lees, gaining texture to balance its vibrant acidity. As for its ageing potential — it speaks for itself!
