Why do we love it?

Santorini Barrel Aged - Vassaltis Winery is finally back! One of our favorite oak aged wines from Santorini!

Its name is inspired by the black volcanic rock formed by the cooling of the basaltic lava that has covered the island of Santorini after the eruption nearly 4,000 years ago. On the other hand, Vassaltis vineyards, even if it counts only a few years of life is now among the best wineries on the island.

Vassaltis gives the island and Assyrtiko the absolute leading role. The extremely small yield per hectare, which does not exceed 150-200 kilos/acre, ensures the concentration of the fruit, which can not only withstand the character of the barrel, but also seeks for it. The barrel aging on the lees for 3 months, with regular batonnage, added complexity and structure, making one extremely enjoyable Santorini with prominently long aging potential. Rich and exuberant, it perfectly integrates the smoky character of the barrel, claiming a place among the great wines of the island.

Tastes Like

Medium lemon color with golden hues.

On the nose evolutionary aromas of unripe yellow fruits and citrus on a background of diffused minerality. Peach, citrus, vanilla, smoke, toast and grapefruit aromas are accompanied by wet stone and flint. 

It is rich, with creamy texture and intensity that awakens the palate. The aromas of the barrel are uniquely combined with its mineral character. The pronounced acidity adds nerve while hints of honey make the citrus fruit sweeter in the mouth. The long-lasting aftertaste leaves the fruit on the palate along with a tasty salty finish.

Vassaltis Vineyards
Vassaltis Vineyards is the newest winery in Santorini and was created by the youngest producers and is located in Vourvoulos area on the road to Oia. A name inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini, the winery is now ready to produce great wines and carve out its own history.

PAIR IT

Perfect pairing with grilled fish or seafood dishes.

Grilled sea bass with spicy soy sauce

  • 2 seabasses (500 grams each), with guts and scales removed
  • olive oil
  • salt and pepper
  • a handful of fresh herbs (rosemary, oregano)
  • 2 lemons or 1 orange
  • 10 g of fresh ginger in thin slices
  • Extra slices of lemon or lime for serving
  •  For the sauce
  • 2 tbsps. of olive oil
  • 2-3 cloves of garlic, finely chopped
  • 1/2 to 1 fresh hot pepper, in thin slices (depends on your preferences)
  • 1/2 cup soy sauce
  • 1/2 tsp. of sugar

Preheat your barbecue or light the charcoal. Gut the fish, remove the scales, and wipe it well. Make 3-4 vertical, to the bone incisions on each side of the fish. Brush the fish, in and out, with olive oil. Season with salt and pepper, in and out. Put in the fish's belly some fresh herbs and slices of lemon or orange. Put slices of ginger in the incisions you made earlier.

Place the fish in a baking pan. After the bbq is ready or after the grill has warmed up well, bake for 5-7 minutes and then turn it on the other side for another 5 minutes.

For the sauce, place a small saucepan on medium to high heat. Add the olive oil and when it's heated up, add the garlic and the chili peppers. Cook for 30 seconds. Add the soy sauce and sugar and allow to boil for 1 minute.

 Pour the sauce over the fish and serve with slices of lemon.
