One of the newest wineries in Santorini returns with its fourth year of production Assyrtiko which is already established among the best on the island. With a name inspired by the black volcanic rock formed by the cooling of the basaltic lava that has covered the island of Santorini after the eruption nearly 4,000 years ago, Vassaltis Winery is now ready to make great wines and to host the countless visitors of the island.
Very different from the 2014 vintage, Santorini 2018 Vassaltis Vineyards lets both the island and Assyrtiko, take the absolute leading role. The alcohol this time is in the normal levels of the island (due to favorable weather conditions) while the very low yield not exceeding 150-200 kg / ha ensures condensation of the fruit. The stay on the lees for 6 months with regular batonnage, added volume and complexity, making one extremely enjoyable Santorini with prominently long aging potential. Rich and exuberant, it integrates seamlessly around the island's mineral character rightfully claiming a place among the big names.
