Giannis Paraskevopoulos's Assyrtiko, whose story has traveled the world, is a super rare wine, and having a sip of it is a life experience. The good news is that we have some of the limited bottles in our hands!
Giannis Paraskevopoulos in 2009 decided to honor the name of his Thalassitis in the most unique way. 450 bottles were sunk in a marine cellar, οff the Kamari, at a depth of 25 meters. Five years later he plucked only 3 of them out, since the thirsty sea "drank" the rest. The result was so good that he thought it was worth the effort and the risk. The wine ages in complete lack of oxygen, under the sea, and in ideal conditions (lack of light, low and stable temperatures). The content of the bottle comes from ungrafted Assyrtiko vines from Episkopi, Pyrgos, and Akrotiri, about 80 years old. The result uniquely combines youth, freshness, and at the same time the amazing evolution of Assyrtiko reminiscent of Riesling and Chablis!
