Why do we love it?

Let's start with the basics. Tomi Mantineia 2023 by Troupis Winery is one of the finest and most interesting white wines ever made from Moschofilero.

Moschofilero comes from a single exclusive vineyard at an altitude of 700m in the heart of Mantineia. There it matures under the constant supervision and care of a local grandfather who sees and cares for it as if it were his garden.

The best grapes are gathered carefully when they reach the ideal maturity. Only the first juice is collected, giving an absolute fruit purity to the fragile Moschofilero.

Forget anything you've tasted so far. Aromatic? Yes! But more rich, oily, more enjoyably complex, with great balancing acidity! Nothing compares to it and it puts the bar very high for anybody trying to do something similar.

Giannis Troupis advises to keep it in your cellar for 2-3 years (yes, Moschofilero ages!) But we are sure you will not restrain yourself.

Tastes Like

It has light lemon color in the glass.

The nose is exuberant with the aromas of the variety (jasmine, orange blossom, honeysuckle, lemon, citrus, bergamot, white peach) to blend in with the notes of the oak barrel (butter, vanilla, butterscotch, hazelnut, tobacco, oak). Everything in absolute harmony!

On the palate, it is medium-bodied, with high aromatic intensity and sharp acidity that balances with the oily, buttery feel. Honey, peach, citrus, sweet lemon, grapefruit, vanilla, candied rose, jasmine, pepper, brioche, almond, butter, toffee fill your mouth in every sip. Pleasant, spicy aftertaste that lasts!

with pasta with salmon, stuffed squid on the grill, chicken with butter - lemon sauce, sea bass or sole fish a la meuniere.

Shrimps with garlic and lemon

  • 500 gr. jumbo sized shrimps. Defrost them if they are frozen. If they are not pre-peeled, peel them when they have defrosted.)
  • 2 tbsps. olive oil
  • 1 tbsp. butter
  • 2 cloves of garlic, chopped
  • 2 tbsps. fresh lemon juice
  • ½ tbsp. lemon zest
  • salt

If you use frozen shrimps, let them defrost overnight in the fridge. Drain the shrimps and dry them with kitchen towel.

 Zest a large lemon and then squeeze the juice to give at least 2 tablespoons of juice and close to half a tablespoon of lemon zest. Clean the garlic and finely chop  it.

 Heat the olive oil in medium to high heat, then add the butter to melt.

Add the shrimps to a single layer and leave until they start getting pink color at the edges, no longer than 1-2 minutes.

Turn the shrimps on the other side and add the chopped garlic. Continue cooking for another 3-4 minutes. Pour in the lemon juice, add the lemon zest and salt to taste and mix to cover the shrimps with the sauce.

Serve immediately
