Varanda do Conde Provam is a brilliantly crisp, vibrant white from Portugal’s Vinho Verde region, blending a true rock‑star grape, Alvarinho, with the rarer Trajadura. Fruit, minerality, structure and laser‑sharp acidity come together seamlessly — all you need to do is choose the dish and the company.

The story of Provam begins in 1992, when 10 growers from the celebrated Monção e Melgaço sub‑region — the finest area for Alvarinho in Portugal — joined forces with a clear vision: to unlock and showcase the full potential of the variety. With consistency, expertise and deep respect for their terroir, they have established a track record of excellence, earning regular accolades at prestigious competitions such as Decanter and the International Wine Challenge.

The name Varanda do Conde Provam reflects the union of Alvarinho and Trajadura (known as Treixadura in Spain). Fermentation at low temperatures in stainless steel tanks, followed by a short period on its fine lees, results in a wine with admirable body, textural depth and a vivid profile of stone fruit and zesty citrus, lifted by refreshing acidity.

Set the seafood and mezze, the wine is sorted.

Tastes Like

In the glass, Varanda do Conde Provam reveals delicate aromas of lime, bergamot, crisp green apple and white peach, layered with notes of wet stone and white blossom.

On the palate, it shows medium body, a gently rounded texture and beautifully crisp acidity. Citrus and stone fruit lead the way, complemented by subtle hints of chamomile and orange blossom, adding finesse and aromatic lift.

PAIR IT

Pair it with grilled squid, prawns in a light white sauce, or sautéed chicken with white wine.

Stuffed squids

  • 1/2 kg squids
  • 2 Onions finely chopped
  • 1 leek finely chopped
  • 1 red Florina pepper
  • 1 cup rice
  • 1/2 cup white wine
  • Olive oil
  • Salt
  • Pepper

Clean the squids by removing the plastic membrane and their skin. Remove the heads, place them separately on a plate, and chop them.

Saute onion and leek in a pan. Add the chopped tentacles to the mixture and finally the rice. Saute them together for a few minutes. Pour a glass of white wine in the pan. Pour in the mixture the chopped Florina pepper, the dill, and the mint. Add salt and pepper.

Fill the squid up to 2/3 with the filling and close it with a toothpick. Put some olive oil on the squids, salt, pepper, and a little sweet paprika. Put them in a pan, cover them with some water, wine, and olive oil and place them in a preheated oven at 200 degrees.

Bake for 35'-40 '(or until the rice is tender).
