Experimentation is at the heart of Ktima Ligas’ philosophy. Thomas Ligas, a pioneer of biodynamic viticulture in Macedonia, is always pushing the boundaries of Greek varieties using natural winemaking techniques. His approach is based on permaculture, a sustainable method that works with nature, not against it. He makes wines with no added sulfites, no commercial yeasts, and no interventions. The result is wines that are authentic, vibrant, and deeply connected to their place and time.
Yomatari 2022 is one of these wines, made from 70% Assyrtiko and 30% Roditis, grown in organically certified vineyards about 25 years old, planted on clay and limestone soils. Fermentation takes place with ambient yeasts in old oak barrels, with absolutely no extra intervention. After fermentation, the wine matures there for several months. Sulfite use is almost zero, and the wine is bottled unfiltered, so it keeps all its natural complexity intact.
