His debut, Moschofilero Ypsilon, is a masterclass in this iconic Peloponnesian variety. Although Moschofilero is a grayish-pink grape typically vinified into whites with subtle gray or orange hues, Panos opts for an approach that emphasizes crystalline purity. While it retains the classic aromas of rose, 'loukoumi' (Turkish delight), and white-fleshed fruits, Ypsilon stands out with a steely acidity and a structured precision that defies the ordinary."
