Why do we love it?

Those who know him, love him. Those who don’t know him yet, are enchanted by his wines. Bakis Tsalkos, having an entire Magic Mountain (and other great Greek wines) as his legacy, took his own way. That of creating great wines under his own label, Oenogenesis winery. The choice of the area was given. He returned to his homeland, Doxato, and gave another air to the wine area of ​​Drama.

After studying oenology in Montpellier and with extensive experience in St. Emillion, Bordeaux, Bakis Tsalkos brought European air into Greek wine with his return. At Oenogenesis winery, the attention to detail sets the basis for the production of some of the largest Greek wines.

His personal bet was to produce a great aged white wine, comparable to those of the great French Chateaux. With Deka X White he succeeded. Three French varieties, three different barrel types. Sauvignon Blanc (55%), Ugni Blanc (15%) and Semillion show their love of the unique terroir of Drama and in the hands of the master of this type of wine, they give a wine with sublime character. Its excellent structure and remarkable taste complexity will make it memorable.

Tastes Like

In the glass, its impressive golgen-yellow colour is mesmerizing.

In the nose, its complex structure and aromatic intensity is an experience! Aromas of sweet ripe yellow fruit, peach jam and quince jelly are surrounded by notes of honey and rose. The delicate aromas of the barrel are intergrated beautifully with aromas of grated toast, roasted almond, vanilla and tobaco which balance harmoniously the total.

The enjoyably intense experience is completed in the mouth! Its body is rich with oily texture and excellent structure and balance. The acuity manifests itself gradually aquiring gradually intensity and longevity. The aromas of the mouth, softer than those of the nose, are impressive. Honey, toast, tobaco and vanilla surround sweet fruit in an enjoyable combination. The long-lasting aftertaste leaves the sense of dried nuts and vanilla which lingers in the mouth.

It will enhance a dish of lamb with honey and rosemary, grilled shrimps or squid but a plate of yellow fatty cheese, as well.

Stuffed chicken roll with quince and potatoes in the oven

  • 1 stuffed chicken roll
  • 1kg potatoes cut into small pieces
  • 500 gr quince cut into thick slices
  • 2 lemons (juice and zest)
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsps. Dijon mustard
  • 1 tbsp. curry powder
  • 1 tbsp. fresh oregano
  • 1 tbsp. fresh thyme
  • 1/2 cup of olive oil
  • Salt and pepper
  • 600 ml of vegetable stock

Preheat the oven to 250 ° C. Add the olive oil to the casserole, then the chicken roll, the cut quince and the potatoes.

Mix the remaining ingredients with a small portion of the stock and pour the mixture on the roll and potatoes. Add stock so that the mixture covers the potatoes.

Cover the casserole and, after lowering the oven to 150 ° C, put it in the oven. From time to time we open the casserole and check whether we need to add some water.

Once ready, uncover the casserole and raise the oven temperature. Leave it there until it's golden brown.
