Why do we love it?

We have mentioned several times that he is included in the lists of the most promising young winemakers worldwide. Kostis Dalamaras, age 29, "played" with the organic blend of Malagousia - Assyrtiko aging it in oak barrels. Applying a special technique of maturation in not completely filled barrels, allowing greater contact of the wine with oxygen during its 12-month stay there.

The choice of its name is far random (smoked). With the photo of the family's ancestors on the label, the Kapnistos 2013 Dalamaras Winery  enchants with complexity in the nose and the intensity and duration in the mouth.

Tastes Like

In the glass, striking golden yellow color.

On the nose, rich aromas of dried peach, roasted caramel and oak leaves no doubt about its being in a barrel. Butter, honey, tobacco and sweet spices are revealed gradually filling one of the most complex aromatic bouquets.

Rich mouth, full-bodied, with moderate acidity that balances the creamy texture. The dried peach insists on the palate and a lovely wood and tobacco feeling remains in the long finish.

PAIR IT

Combine the chicken cutlets, duck in the oven, grilled mushrooms, yellow cheese, oily fish or stuffed tomatoes.

Roasted duck

1 duck, about 3 kg
1 kg of potatoes, peeled, cut into large pieces 
4 onions, chopped
50g of duck fat
2 cloves garlic, finely chopped
1 tablespoon chopped sage
2 lemon zest

Preheat the oven to 220 ° C.

Season the duck with salt and pepper in the cavity.

Boil the potatoes in salted water until soft, then drain them well and mush them. Fry the onions in duck fat until they get a golden brown colour. Add the garlic to the potato puree and mix with sage, lemon zest and pepper. Put the mixture in the duck's cavity. Put the duck on a spacious baking tray in the middle of the oven. Bake for 30 minutes in 220 ° C.
Then, lower the temperature to 180 C or 160 C and roast the dusk for 2 ½ hours.
When the duck is cooked, remove it from the oven and leave it to rest for 15 minutes.
We recommend serving it with red cabbage and baked potatoes.
