Why do we love it?

Klima Vidiano is one of the top expressions of the Greek variety and an adorable white wine. It's our great weakness, and it appears that we are not the only ones! The impressive aromas of freshly cut peach and chamomile combined with its refreshing acidity make it truly irresistible!

It is no secret that Vidiano is one of the most dynamic Greek white varieties and among those with the greatest potential to evolve over time. Nikos Karavitakis truly believes in its potential and is dedicated to rising it even higher. Every year, he does not stop experimenting with different vineyard sites, lees-contact, different barrels, and winemaking techniques to bring only the best in our glasses.

Klima Vidiano is fermented in stainless steel tanks and has short sur lie maturation since its amazing, pure fruit doesn’t need anything more. On the other hand, 2023 is probably its best vintage (so far). The slightly lower alcohol and refreshing acidity, make it overflowing with freshness and crystal elegance and makes us want to empty the whole bottle!

Tastes Like

Bright yellow color with greenish reflections in the glass.

Elegant aromatically as it should, with fruits and flowers to come into play successively. Initially ripe peach and apricot acquire lemony sensation accompanied by lime and bergamot. Daisy and chamomile gradually make their appearance, complemented by subtle hints minerality that adds character.

Medium to rich body, oily, and refreshing acidity that balances the palate. Peach and lime are in the spotlight followed by chamomile. The long aftertaste leaves sweet apricot sensation in the mouth that lasts.

In Karavitakis Winery, located in Chaniamain effort is to produce wines with all the typical characteristics of each cultivated grape variety, and every wine to obtain elements that will show the diversity of the terroir. This is achieved due to the excellent location of the vineyards that combines mild altitude with proximity to the sea. Continuous experimentation with new varieties and techniques characterizes the philosophy of the winery, which in combination with the love for tradition, give us unique results.

PAIR IT

Pair it with seafood, shellfish, light cheeses, and salmon.

Shrimps with peas and ginger

  • 3 tbsps. of olive oil
  • 300 grams of mushrooms cut into four
  • 1/3 cup of peas
  • 8 large shrimps peeled
  • 1 tsp. grated ginger
  • 3 tbsps. of soy sauce
  • 1 tbsp. vinegar of white wine

Heat 2 tablespoons of olive oil in a pan, on high heat. Add the mushrooms and let them soften by stirring, about 5 minutes. Remove them from the pan and put them on an absorbent paper.

Add the peas to the pan and cook by stirring for about 2 minutes. Remove them from the pan and put them along with the mushrooms on the absorbent paper.

Add 1 tablespoon of olive oil to the pan. Then put the shrimps and chopped ginger in the pan. Reduce the heat to moderate and cook until the shrimp becomes opaque, about 4 minutes.

Return all vegetables to the pan, add soy sauce and white wine vinegar. Cook until they are warm enough, about 4 minutes.
