One such case is the Klima Vidiano of Karavitakis Vineyards. The Vidiano the flagship variety of Crete, which has excited wine lovers and critics, was released just days ago, probably in its best version of this vintage.

Fortunately, Manolis Karavitakis the sophisticated oenologist, is in no hurry. He gives the wine the time it needs, both in the tank and in the bottle before it is fully ready to fascinate anyone lucky enough to find it in his glass.

Now it promises great excitement. If Vidiano has not charmed you yet, the time to do it has come. And Klima Vidiano 2017 of Vineyards Karavitakis has all it takes!

Tastes Like

Bright yellow color with greenish reflections in the glass.

Elegant aromaticaly as it should, with fruits and flowers to come into play successively. Initially ripe peach and apricot acquire lemony sensation accompanied by lime and bergamot. Daisy and chamomile gradually make their appearance, complemented by subtle hints minerality that add character.

Rich mouth, oily, with light sweetness and refreshing acidity that balances the palate. Peach and lime are in the spotlight followed by chamomile. The long aftertaste leaves sweet apricot sensation in the mouth that lasts.

KLIMA VIDIANO 2017 - KARAVITAKIS VIENEYARDS

PAIR IT

Pair with seafood, shellfish, light cheeses and salmon with asparagus

Shrimps with peas and ginger

  • 3 tbsps. of olive oil
  • 300 grams of mushrooms cut into four
  • 1/3 cup of peas
  • 8 large shrimps peeled
  • 1 tsp. grated ginger
  • 3 tbsps. of soy sauce
  • 1 tbsp. vinegar of white wine

Heat 2 tablespoons of olive oil in a pan, on high heat. Add the mushrooms and let them soften by stirring, about 5 minutes. Remove them from the pan and put them on an absorbent paper.

Add the peas to the pan and cook by stirring for about 2 minutes. Remove them from the pan and put them along with the mushrooms on the absorbent paper.

Add 1 tablespoon of olive oil to the pan. Then put the shrimps and chopped ginger in the pan. Reduce the heat to moderate and cook until the shrimp becomes opaque, about 4 minutes.

Return all vegetables to the pan, add soy sauce and white wine vinegar. Cook until they are warm enough, about 4 minutes.
