Why do we love it?

Moschato Spinas was yet another forgotten Greek variety. A few years ago, two brothers, Manolis and Kostis Strataridakis decided to help it prove itself, giving it the place it deserves. At the southernmost winery in Europe, the variety was given the opportunity it needed. Today, it has been established in the Cretan vineyards and its single varietal wines have earned their place on the top of white aromatic Greek wines.

Both of them agriculturists cultivate their family-owned vineyards which consist mainly of the land of Sinai Monastery of the Holy Apostles at the foot of Asterousia near Heraklion.

Originating from the Province of Spina in Chania, Muscat of Spina, is related to small-berry Muscat, mainly differing in the thickness of the berry skin.

Uniquely elegant and aromatic, Muscat of Spina by Strataridakis Winery promises to impress the whole company with its freshness, brio, and totally summery character!

Tastes Like

Pale yellow color in the glass with greenish highlights.

The nose is intense, with fresh enchanting aromas of flowers and fruits. Jasmine, hyacinth, rose, freesia, gardenia, primrose, and chamomile are combined with peach, grape, and unripe strawberry at an aromatic party. Botanical hints, honey, and butter add complexity to a set full of freshness.

On the palate, rich, elegant, with a creamy texture and acidity at properly balanced levels. The subtle sweetness is tickling the palate adding volume to floral oral aromas. The night flower, the gardenia, and chamomile dominate accompanied by peach and apricot jam. The jammy feeling remains in the mouth in the long aftertaste.

Pair it with white cheese, pies, fresh salads or enjoy it on its own as an aperitif.

Spaghetti with shrimps, lemon and fennel

1 pack of spaghetti No6, whole-wheat
800 gr. shrimps
2 lemons
5-6 cloves of garlic
1 little bunch of fennel
ground pepper
sea salt
chili flakes
olive oil

Carefully peel and cut the shrimps’ heads. Place them in a pot with 300ml water and boil them, along with 3 cloves of garlic for 15 minutes. Then, filter the broth with a sieve, by pressing it well and keeping it warm.

At the same time, boil the spaghetti in salted water and cook them “al dente”. Take the lemon zest and chop the fennel.

In a large pan, pour 20 ml olive oil and the rest of the garlic. Once the olive oil is warm enough, remove the garlic and add the chili flakes.

Place the peeled, boiled shrimps in the hot pan and leave them for 1-2 minutes on each side. Season with salt and pepper, add a little fennel, a bit of lemon zest and pour in the lemon juice.

Remove the shrimps and in the same pan, place the spaghetti directly from the pot and increase the temperature. Add the broth you have prepared and mix well.

When the spaghetti have absorbed all the broth, sprinkle with fennel, pepper and the remaining zest. Serve the spaghetti with shrimp immediately.
