In 1880 Simon Bize buys and plants vineyards at key points on the Cotes de Beaune and in 1950 his grandson begins bottling wine in his name. Several years later the winery is in the hands of the fourth generation. Old vines, low yields, native yeasts, old and new barrels. Finally, the wines from Domaine Simon Bize are bottled unfiltered.
