Behind Xydakis Winery is Giorgos Xydakis, a dentist in the profession who is dedicated to the promotion of Cycladic varieties and the creation of special wines. Xydakis Winery was founded in 2001 and it included an old vineyard with native Cycladic grape varieties with which he engaged as an amateur, and bottled wines for friends. He produces wines from old vineyards, mainly in Mykonos but also from the surrounding islands, with minimal interference and indigenous yeasts. Every wine is bottled in very limited bottles and addressed to wine lovers and collectors.
