The term "Natural Wine" has finaly been legally defined. However, the term "Natural Wines", means different things in different countries but when used, refers to wines which fulfill most of the following criteria: manual harvesting and sorting, organic or biodynamic cultivation, fermentation with indigenous yeasts, without the addition of enzymes or other oenological additives, no technical processing such as stabilization or filtering and most of all without additional sulfites!
These are the best Greek natural wines and some of the best in the world!
