To begin with, the term "Natural Wine" is not legally defined yet. However, the term "Natural Wines", when used, refers to those wines which fulfill most of the following criteria: manual harvesting and sorting, organic or biodynamic cultivation, fermentation with indigenous yeasts, without the addition of enzymes or other oenological additives, no technical processing such as stabilization or filtering and most of all without additional sulfites!
