Manchego Riserva is the king of Spanish cheeses. With a taste reminiscent of aged sheep Gruyere, but even more complex, it is a really delicious cheese. It is produced in the region of La Mancha, the home of Don Quixote, from the manchego sheep breed. This one matures for about a year and acquires a firm texture and salty and spicy taste.
Such a sophisticated cheese is better enjoyed with some breadsticks and chutney. Another alternative is to add it to salads or make Cacio e Pepe pasta with it. It wants by its side bold red wines from Cabernet Sauvignon and Sangiovese! What would you say about a Rosso di Montalcino?
