Speck di Asiago Fior di Maso is an exquisite handmade pork cold cut. The historic Fior di Maso has been making PDO cold cuts and cheeses since 1887. One of them is the famous speck. The meat is first pressed and then salted and smoked on beech and juniper berries. The result is simply irresistible. It has a tender texture and discreet aromas of smoke and herbs.
You can enjoy it plain but also add it to pizzas, bruschetta, and pasta. A great idea is to wrap a slice of goat cheese with speck and bake it in the oven for 10 minutes until it gets an even color and the cheese melts. It goes uniquely with Riesling or oaked, white wines from Vidiano but also rich rose wines from Xinomavro.
