As its name implies, Niotisa originates from the picturesque island of Ios. This amazing cheese is renowned for its exceptional taste. It is a graviera (gruyere) cheese meticulously crafted using only the milk of Jersey cows, which are known for producing milk with distinct aromas and flavours.
Niotisa is matured for four months, resulting in a rich and buttery texture. It can be enjoyed plain, with some fresh pears or grapes, or incorporated into pies and tarts. It pairs excellently with crisp white wines from Vidiano or Robola, as well as full bodied and structured rosés from Xinomavro or Grenache.
