It’s time to introduce you to a well‑kept secret of the Italian vineyard! We’re taking you south, to the island of Sardinia, and to the remarkable Andaras Carignano del Sulcis 2020. This is a single‑varietal Carignan that will surprise you with its richness, complexity, and elegance—qualities not often associated with Carignan. Of course, when you’ve spent years training alongside Dal Forno, like Marco Pinna has, finesse becomes second nature, even in the most challenging wines. James Suckling agrees, awarding it 92 points!

Società Agricola Andaras is a new project by Marco Pinna, export manager of the legendary Dal Forno, and Paolo Balia, a viticulturist with 30 years of experience. Their goal is to combine their expertise in wine production and promotion to create wines from their own vineyards in their beloved homeland, Sardinia—wines that mentally transport you to the island’s unique terroir.

Andaras Carignano del Sulcis 2020 comes from Carignan vines over 60 years old in the southern part of the island. It undergoes fermentation with indigenous yeasts and ages for 14 months in French barriques before being bottled unfiltered. The wine then rests in the bottle until Marco and Paolo decide it has reached the perfect moment to appear on our shelves.

This Carignano del Sulcis retains all the richness and power of the variety and the land that gave birth to it, and it’s ready to impress everyone at your next table.

Tastes Like

On the nose, it shows intense aromas of ripe raspberries, cranberries, plums, cherries, dried strawberries, Mediterranean herbs, sweet spices, forest floor, graphite, and cedar.

On the palate, it has a medium‑to‑full body, pronounced acidity, and medium‑plus tannins that are perfectly integrated with the dense red fruit. A delicious umami note reminiscent of olive paste and dried herbs completes the complex bouquet.

Pasta bake with bolognese sauce

For the Bolognese Sauce


500 gr. beef, minced
1 onion, chopped
2 cloves of garlic
1 carrot
3-4 sprigs of parsley
2 tomatoes or concasse tomatoes 
1 teaspoon tomato paste
150 ml. White Wine
1 teaspoon of sugar
marjoram, dried
thyme, dried
Olive oil
Freshly ground pepper
Salt

For the pasta
500 gr. cooked spaghetti
1 tablespoon of butter
400 ml. cream
300 gr. mozzarella cheese
150 gr. Parmesan cheese
150 gr. Regato cheese
2 tablespoons of bread crumbs or panko

For the Bolognese sauce

In 3 tablespoons of olive oil, saute the onion, garlic and the vegetables until they are softened.
Add the minced meat by stirring continuously with a wooden spoon to break the lumps and saute it until it is lightly browned.
Then add the wine and stir for 2-3 minutes.
Add the broth, tomatoes, paste, sugar, herbs, salt and pepper. Allow to simmer on low heat until the sauce is thickened. After that, set it aside, add a few tablespoons of parmesan and mix well.

For the pasta
Mix the cheeses with the cream and season with a lot of freshly ground pepper.
In a pyrex, make layers of minced meat and spaghetti. Finally, cover the top with the cream cheese mixture and sprinkle with panko or breadcrumbs .
Bake at 170 ° C until the cheeses melt and gets a golden - brown color.
