Why do we love it?

Michele Chiarlo’s Barbaresco Asili 2018 is a wine that captures the aristocratic finesse of the Nebbiolo grape, drawn from the historic and iconic Asili cru in Barbaresco. If Barbaresco Palas represents the more approachable side of Nebbiolo, Asili stands at the top of the pyramid—offering depth, complexity, and impressive aging potential. The outstanding 2018 vintage has earned 95 points from James Suckling, 94 points from Wine Enthusiast, and 93 points from Wine Spectator.

The story behind the name Michele Chiarlo is just as compelling. Since founding his winery in Calamandrana in 1956, Michele has been committed to showcasing the character of Piemonte’s native varieties and its unique microclimates. He was among the first to champion single-varietal wines, focusing on Nebbiolo, Barbera, and Cortese. Today, his sons Stefano and Alberto, along with the next generation, continue the legacy with the same passion—tending the family’s vineyards and crafting wines that authentically express their origin.

The terroir of Asili is defined by limestone-rich soils with high levels of magnesium and calcium, lending elegance and depth to the wines. Asili is widely considered one of Barbaresco’s finest crus, known for wines that overflow with finesse and aromatic intensity. For the 2018 Barbaresco Asili Michele Chiarlo they source grapes from vineyards at 250 meters elevation. The wine ferments in large oak casks and matures there for 18 months, followed by an additional 12 months of bottle aging.

Tastes Like

In the glass, Barbaresco Asili 2018 Michele Chiarlo shines with a brilliant ruby color and garnet hues. The nose reveals ethereal aromas of violet, red fruits, and spices like cinnamon, licorice, and black pepper. Hints of graphite, tea leaf, and ink round out the bouquet.

On the palate, it offers medium to full body, crisp acidity, and well-integrated medium-plus tannins. Flavours of cherry, blackberry, and plum are layered with spice and dried floral notes.

Pair it with braised beef cheeks with mushrooms, rack of lamb with polenta, or ravioli stuffed with stewed rooster.

Stuffed lamb cooked in vine leaves

For the lamb roll


4000 gr. lamb leg, deboned
1 package of vine leaves
3 grilled peppers 
300 gr. kefalograviera
Freshly ground pepper
Salt

For the marinade


5 cloves of garlic
4 tablespoons dill
4 tablespoons parsley
1 tablespoon fresh thyme
1 spring onion
80ml olive oil
Freshly ground pepper
Salt

In addition, we will need


Baking sheets

In a blender, mash all the marinade ingredients.

Season the lamb well on all sides and spread the marinade on the inside.

Spread 2-3 sheets on your counter, which will fit the lamb, spread the vine leaves and place the lamb above them.

Fill the peppers with the cheese, place them in the middle and wrap in a roll, lifting the oil sheet with the vine leaves.

Close well, place the roll in a baking pan and bake in a preheated oven at 180o C for 4 hours.

Serve the roll hot or at room temperature.

Extra tips

-We can fill the lamb with any filling we like such as rice or pine nuts
-If we do not like dill, we skip it
