Why do we love it?

Belcanto Chianti Classico 2022 from Fattoria Nittardi is a juicy, floral, and refined Chianti from the beloved Nittardi estate. The blend, which includes 15% local varieties and comes from soils rich in galestro (schist), is responsible for its complexity and its elegant mineral elements that make it irresistible. Oh, and James Suckling has rated it 92pts!

The Fattoria Nittardi estate has a history dating back to 1183 and stands out particularly because, in the 16th century, it belonged to Michelangelo Buonarroti. While painting the Sistine Chapel, he would send his wine every year as a gift to the Pope— a tradition that continues to this day with the presentation of new wines first at the Vatican. Since 1982, the estate has belonged to Peter Femfert and Stefania Canali, who have elevated it to one of the highest‑quality producers in the Chianti Classico zone, combining history, art, and modern winemaking techniques. It mainly produces Sangiovese‑based wines, emphasizing terroir expression, while also experimenting with blends using other local and international varieties.

Belcanto Chianti Classico 2022 is one such wine. It is made from a blend of 90% Sangiovese from the Nittardi vineyards and 10% from seven other native varieties sourced from the San Quirico vineyard, south of Castellina, planted in 1968. These include Canaiolo, Colorino, and Malvasia Nera. Fermentation takes place in stainless steel tanks to highlight the freshness of the fruit, followed by 12 months of aging in used 500‑liter French oak barrels and large 3,500‑liter casks.

A pure expression of fruit, elegant tannins, and an authentic sense of Chianti Classico—combined with the region’s signature minerality—make Belcanto Chianti Classico 2022 a perfect example of what the area can offer when crafted with passion and the expertise of Fattoria Nittardi.

Tastes Like

On the nose, it shows expressive aromas of black cherry, blackberry, raspberry, hints of leather, licorice, dried oregano, thyme, and hints of lavender and violet.

On the palate, it features medium body, crisp acidity, and moderate, well‑crafted tannins. Rich fruit—mainly blackberry, raspberry, and sour cherry—is accompanied by sweet spices such as cinnamon and clove, along with light earthy notes and hints of leather.

Enjoy it with a pizza topped with prosciutto, pasta with red sauce and meatballs, or assorted cured meats.

Rooster Pastitsada (spicy tomato sauce)

1 kg of rooster, cut into portions

500 gr. spaghetti (ideally no. 2)

1 clove of garlic

2 large onions

2 tbsps. white wine vinegar

200 ml. red wine

1 tbsp. of sugar

1 tbsp. of butter

2 tbsps. of tomato paste

150 gr. tomato sauce

2 bay leaves

1 cinnamon stick

3-4 all spices

Olive oil

Freshly ground black pepper

Salt

Wash the rooster and dry it with absorbent paper. Heat up the olive oil in a frying pan, brown the pieces of the rooster well on all sides and transfer them to a wide, deep pot.

In the pan (with the olive oil) we used before, add the butter, garlic and onions after chopping them. We saute them until they soften, and then add the vinegar. Then return the meat into the pot.

Put the pot in high heat and pour in the wine. Leave for a few minutes to evaporate and then add the spices, sugar, pepper and salt. Finally add the tomato paste dissolved in a cup of hot water.

Lower the heat and let simmer until the meat softens and the sauce is thick.

Check regularly to have enough sauce and add extra hot water if necessary.

When the rooster is tender, boil the spaghetti in another pot.

Remove the meat from the saucepan and place it on a serving platter. Put the spaghetti in the sauce and mix well to absorb the juices.

Serve the spaghetti with the meat and if you want, sprinkle with a little cinnamon and grated cheese.
