Why do we love it?

Ponce 2019 from Bodegas y Viñedos is a juicy, expressive red wine bursting with cherry aromas and a crisp, refreshing acidity. It’s a pure, authentic take on the rare Spanish grape Bobal, crafted by Juan Antonio Ponce, a rising star in Spain’s new wave of winemakers, known for his low-intervention philosophy. Bodegas y Viñedos Ponce is a standout winery that follows biodynamic practices and is known for producing wines with incredible quality for their price. Bobal is a native red grape from the Utiel-Requena region. Though widely planted, it was long overlooked and mostly used in blends. But in recent years, Juan Antonio Ponce has been on a mission to show what Bobal can really do—focusing on its true character and potential.

At just 23, he founded his winery in the lesser-known but up-and-coming Manchuela region of Spain. Since then, he’s been crafting single-varietal wines from native grapes like Bobal, Albillo Real, Moravia Agria, Monastrell, and Garnacha, all sourced from old-vine plots. His approach is all about minimal intervention—letting the land and the grape speak for themselves.

Ponce 2019 is a perfect example. It comes from 60-year-old vines and is a blend of 85% Bobal and 15% Moravia Agria. The grapes are fermented separately with ambient yeasts in wooden vats, then blended and aged in 600-liter French oak barrels for 12 months. It’s bottled unfiltered, with no additives—just pure, honest wine.

This is a stunning red that’s been gently aged and is ready to enjoy now. It’s a great way to discover Bobal and experience the magic of Spanish vineyards.

Tastes Like

On the nose, it’s packed with aromas of cherry, sour cherry, strawberry, blackberry, and plum, layered with hints of vanilla, violet, pepper, tea, lavender, licorice, and dark chocolate.

On the palate, it has medium (+) body with moderate tannins and refreshing acidity. Juicy red and black fruits mingle with sweet spice, violet, cocoa, and dried herbs in a beautifully complex sip.

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

 

 

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
