Why do we love it?
Cabernet Franc from the Antonopoulos Vineyards cannot be missing from any proper and well-organized summer barbeque. Its deep purple color and roasted red and green pepper aromas, combined with its rich structure, will win you over from the very first sip and you won't be able to put it down easily. It also bears the signature "Selections of Constantinos" and here things get serious!
 
In 1983, Konstantinos Antonopoulos planted his first vines in the Achaia peninsula, at an altitude of 950 meters. The location he chose to cultivate was not at all accidental, since he immediately understood the dynamics of the terroir, in a location surrounded by the mountains Panachaikos, Helmos, and Erymanthos, with the cool breezes ripening the grapes perfectly. Today, the "Selections of Constantinos" collection expresses the vision of Constantinos Antonopoulos, to highlight the special characteristics of the varieties that adapted to this place and gave masterpiece wines. 
 
Cabernet Franc is considered one of the hardier varieties on the vine and the steep and inaccessible hills put another degree of difficulty in its cultivation and harvest. After fermentation, it matured in oak barrels for about 18 months and its fine aromas balanced the barrel feel and gave a very enjoyable result.
 
Cabernet Franc from Konstantinos Selections is a must-try with pizza or any meat for BBQ and if you cool it for half an hour it will be a balm!

Tastes Like
In the glass, it is deep purple. Intense aromas of violet, roasted green and red pepper, cherry, blackberry, sour cherry, and cassis. Notes of vanilla, butterscotch, cinnamon, green pepper, tobacco, and chocolate.
 
In the mouth, it has a full body with cool acidity and a very balanced structure. Green pepper, red pepper, pizza, and a herbality that gives freshness. The aftertaste is long.

Enjoy it with hard and aged cheeses, rib eye, beef burger with bacon, pepperoni pizza, sausages and grilled meats

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

 

 

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
