Cavalieri red Lazaridis, is an intense blend of the varieties Sangiovese, Cabernet Franc, Cabernet Sauvignon και Merlot. This finesse is now a regular influence on the wines of Nikos Lazaridis, and fully justified, since Tuscany was his greatest inspiration. One of the most important and pioneering winemakers of Northern Greece, he became the founder of the first winery in Drama. With his debut in 1987, as soon as he returned from his stay in Tuscany, he put forward the big project of promoting his birthplace. He decided to put his knowledge and experience into practice and began to vinify Greek and international varieties with new techniques. Completely expected, the impact on the Greek public was huge! Very soon he won his trust and today he has managed to earn a place at the Greek, Sunday, family table...something that once would have seemed extremely difficult! So grab that pork chop and cook it with thyme on the grill! We assure you that the concentration of the fruit, and its robust character are ready to accompany it...

For Cavalieri red Lazaridis, each variety is fermented separately, at low temperatures. The aromas and the sensation of butter in the mouth are due to the malolactic fermentation that follows. It is then matured in oak barrels for a full 12 months, where all its elements are integrated.

You can keep it in your wine conservator for up to 8 years!

Tastes Like

In the glass it is intense ruby with purple highlights. It has a high aromatic intensity, with aromas of red fruits and forest fruits. Wild berries, chocolate, vanilla, butter and nuts dominate, with a gentle herbal mint character.

It has a full body, with medium (+) acidity and very well integrated tannins. The aftertaste is long.

PAIR IT

Pair it with beef stew with red wine, wild boar with plums, beef striploin

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

 

 

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
