Why do we love it?

Chateau Kirwan 2015 has scored 93pts by James Suckling and Jeb Dunnuck and 17.5 / 20 by Jancis Robinson. And when Jancis gives such ratings things are getting serious, very serious. If these are not enough for you, we will tell you that it was one of Thomas Jefferson's favorite wines.

Chateau Kirwan is located in the mythical village of Margaux, on the Cantenac plateau and belongs to the Third Growths, based on the categorization of 1855. Since 1926 it has passed into the hands of the Schÿler family. Their philosophy is to make wines with as few interventions as possible (before it even became fashionable). That is why they call themselves "wine helpers" and not winemakers.

Chateau Kirwan blend consists of 50% Cabernet Sauvignon, 35% Merlot, 10% Cabernet Franc and 5% Petit Verdot. The wine fermented with selected, ambient yeasts and matures for 18 months, in French oak barrels, 50% new. The result is ethereal and at the same time dynamic while the year 2015 is a vintage that, as they say, they have been waiting for years.

Jancis says it may age by 2040 but who can wait.

CHATEAU KIRWAN 2015 - CHATEAU KIRWAN

PAIR IT

Perfect pairing with veel braised in red wine, venison fillet with bordelaise sauce, slow-roasted pork belly with five spices

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
