Why do we love it?
Clos Stegasta Mavrotragano "Rare" by T-Oinos winery is an amazing Greek red wine that impresses with both its structure and its complexity. And how could it be otherwise since behind this wine, there is a dream team with the best oenologists from Bordeaux and California!

The piece de resistance - winery of Tinos, was founded in 2002 in the village of Falatado. The first harvest took place in 2008 and since then everything is getting better, with new labels and a lot of experimentation. The name of the wine is derived from the covered presses (stegasta) that were traditionally established on the island to press the grapes on the spot, protected from the strong winds. "Rare", on the other hand, means that the wine is made only in exceptional vintages, from the best part of the vineyard. The vineyards are located on the terraces of Rasona vineyard, at an altitude of 400 meters. Manual harvesting is done in as many different stages as needed, to ensure the perfect ripening of the grapes. Then, the wine is fermented with indigenous yeasts, in stainless steel and oak tanks. After that, it is aged for 12-14 months in French oak barrels of 500 liters (20% new). This is a top sample of the variety that easily puts down many Santorini.

Over the next decade, Clos Stegasta Mavrotragano "Rare" will evolve uniquely but if you cannot wait, take out dry aged Tomahawks.

Tastes Like

It has deep, opaque purple color and intoxicating nose, full of sour cherries, blueberries, chocolate, star anise, vanilla, cinnamon, and cloves. The mineral character in combination with the earthy one, add impressive complexity to the whole.

Rich, full mouth, with intense tannins and high acidity, but perfectly balanced with the dense black fruit. Sweet spices, chocolate, tobacco, and a sense of saltiness compose the perfect set.

PAIR IT

Pair it with rib eye steak, beef bourguignon or wild boar ragu with pappardelle pasta.

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

 

 

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
