Côte‑Rôtie 2022 from Château Saint Cosme is a striking and genuinely value‑for‑money wine, awarded 95 points by James Suckling and 93 points by Wine Spectator. It ranks among the finest wines of this prestigious appellation, and its high ratings confirm exactly what its reputation suggests: a wine of depth, purity and remarkable finesse offered at a highly attractive price.

Château Saint Cosme, a long‑standing favourite of the Greek market, is based in Gigondas in the Southern Rhône and has remained in the same family since 1492. Critics consistently regard it as the leading estate of the region.

For this Côte‑Rôtie, the fruit comes from Serine, the ancient and highly aromatic local clone of Syrah that the domaine has preserved over generations. The vines grow on the steep granitic slopes typical of the appellation. Fermentation takes place entirely with whole clusters, a choice that adds both exuberant fruit intensity and finely woven tannins. The wine then ages for twelve months in a mix of new (thirty percent) and second‑use large oak casks, allowing complexity to develop without overshadowing the purity of the fruit. It is a wine that already impresses but is clearly poised to become even more expressive and harmonious with a few years of patience.

Tastes Like

At first encounter, the aromatics are captivating. The nose offers violet, black cherry, blackberry, fresh pepper, Mediterranean herbs, spice and a touch of smoke.

On the palate, the wine is full‑bodied, with velvety tannins and vibrant acidity. Juicy ripe fruit, spice and a subtle savoury depth fill the mouth with every sip.

Chateau Saint Cosme
The history of the Saint Cosme winery located in southern Rhone begins in 1490, outside the village of Gigondas. Today at the helm of the family business is Louis Barruol, the 14th generation of the family winemakers, who believes that there are fantastic plots of land in the surrounding area with a unique combination of different soils and a special terroir. One such example is the vineyards on the hills of Gervans and Erome, behind the hill of Hermitage, where they could form a new separate appellation. With its old vines, organic farming and ancient winemaking methods, it emphasizes the emergence of the terroir.

Wild boar casserole with tagliatelle pasta

  • 1 kilogram of wild boar
  • 1 carrot coarsely chopped
  • 1 celery coarsely chopped
  • 1/2 bunch of fresh onions finely chopped
  • 1/2 bunch of parsley finely chopped
  • 2 cloves of garlic
  • 3 tbsps. of mustard
  • 3 tbsps. of lemon juice
  • 5 allspice berries
  • 1 bay leaf
  • Salt and pepper
  • 200 g olive oil
  • 250 ml red wine (preferably xinomavro)
  • 500 g of tagliatelle

 

Cut the wild boar in portions. Put all the ingredients in a bowl, except olive oil and pasta. Marinate for at least 12 hours.

When we are ready for cooking, remove the boar from the marinade, drain it to leave the many liquids and sauté with the oil until it gets golden-brown. Add the marinade and lower the heat to simmer for 30 minutes.

Transfer them all to the casserole and put it in a preheated oven, at 150 ° C. Stir regularly to keep liquids from sticking. If more liquids are needed, add some vegetable broth.

Boil the pasta according to the instructions (preferably al dente).

Garnish with a little chopped parsley over the plate.
