Cotes du Rhône Saint Cosme is not an entry level Rhone but a juicy and delicious wine, with character and the stamp of the famous winery Saint Cosme. Of course, in the past it has not left wine critics unmoved and the same is about to happen with the 2024 vintage that was just released!

The Saint Cosme winery has been located in southern Rhone, just outside the village of Gigondas, since 1490. It is a family affair as Louis Barruol, the family's 14th generation winemakers, is currently at the helm. The emphasis is on highlighting both the terroir and the old vines, with ancient winemaking methods and organic farming. Louis Barruol believes that there are fantastic plots of land in the surrounding area, with a unique combination of different terrains and a special terroir, which is worth spending time and effort, being sure that their wine will compensate him. The Cotes du Rhône Saint Cosme is one of them. Syrah grapes come from 3 different soils (limestone, pebble and clayey). The wine is fermented with native yeasts and matures in stainless steel tanks because the purpose is to create a wine with dense fruit and a clear Syrah character.

Tastes Like

Cotes du Rhône Saint Cosme has a deep purple color and impressive aromas of plum, black cherry and berry framed with notes of pepper, graphite, bacon and chocolate.

In the mouth it has a medium body, balanced acidity and soft tannins. Juicy black fruits are mixed with hints of violet, pepper and licorice.

Chateau Saint Cosme
The history of the Saint Cosme winery located in southern Rhone begins in 1490, outside the village of Gigondas. Today at the helm of the family business is Louis Barruol, the 14th generation of the family winemakers, who believes that there are fantastic plots of land in the surrounding area with a unique combination of different soils and a special terroir. One such example is the vineyards on the hills of Gervans and Erome, behind the hill of Hermitage, where they could form a new separate appellation. With its old vines, organic farming and ancient winemaking methods, it emphasizes the emergence of the terroir.

Pasta bake with bolognese sauce

For the Bolognese Sauce


500 gr. beef, minced
1 onion, chopped
2 cloves of garlic
1 carrot
3-4 sprigs of parsley
2 tomatoes or concasse tomatoes 
1 teaspoon tomato paste
150 ml. White Wine
1 teaspoon of sugar
marjoram, dried
thyme, dried
Olive oil
Freshly ground pepper
Salt

For the pasta
500 gr. cooked spaghetti
1 tablespoon of butter
400 ml. cream
300 gr. mozzarella cheese
150 gr. Parmesan cheese
150 gr. Regato cheese
2 tablespoons of bread crumbs or panko

For the Bolognese sauce

In 3 tablespoons of olive oil, saute the onion, garlic and the vegetables until they are softened.
Add the minced meat by stirring continuously with a wooden spoon to break the lumps and saute it until it is lightly browned.
Then add the wine and stir for 2-3 minutes.
Add the broth, tomatoes, paste, sugar, herbs, salt and pepper. Allow to simmer on low heat until the sauce is thickened. After that, set it aside, add a few tablespoons of parmesan and mix well.

For the pasta
Mix the cheeses with the cream and season with a lot of freshly ground pepper.
In a pyrex, make layers of minced meat and spaghetti. Finally, cover the top with the cream cheese mixture and sprinkle with panko or breadcrumbs .
Bake at 170 ° C until the cheeses melt and gets a golden - brown color.
