Why do we love it?

Fondreche Rouge 2020 Domaine Fondreche is a very elegant and fruity Rhone red wine from the emerging Ventoux appellation. The secret among the circles of sophisticated wine lovers is that Ventoux can produce fantastic wines, at very low prices, compared to its famous neighbors.

The duo of Sébastien Vincenti and Nanou Barthélémy dedicated themselves to finding the right variety for each microclimate. Their wines are characterized by rich fruit, elegance, marked acidity and freshness. This is in part due to the altitude which allows the fast ripening of the grapes that allows retaining their acidity. Their vineyards are cultivated biodynamically and spread mostly on a sandy loam plateau at the foot of Mont Ventoux. Fondreche Rouge 2020 Domaine Fondreche is a perfect reflection of the style both of the winery and Ventoux appellation. The blend consists of 50% Grenache, 40% Syrah and 10% Mourvèdre and the wine matures in oak foudres, barriques and egg-shaped concrete tanks for 18 months. The result is peppery and overflowing with fresh red and black fruits.

Fondreche Rouge 2020 Domaine Fondreche has medium ruby color and elegant aromas of pepper, strawberry, sour cherry, plum, cherry, eucalyptus and leather.

In the mouth it has medium body, medium (+) acidity and silky tannins. Ripe red and black fruits mingle with notes of pepper and sweet spices on a lavender background.

Pairs with chicken skewers, pork tenderloin with pepper sauce, fried camembert with raspberry jam

Fettuccine with spicy chicken, olives and feta

500g fettuccine 
600g chicken fillet
3 heirloom peppers
1 onion
2-3 cloves of garlic
100ml wine
50ml extra virgin olive oil
400g chopped tomatoes
150ml tomato juice
2 teaspoons chili flakes
1/2 teaspoon oregano
1/2 teaspoon thyme
1 teaspoon dried basil
1/2 teaspoon dried parsley
1 teaspoon smoked paprika
1 teaspoon sugar
250 gr. spicy Feta cheese
100 gr. green and black olives (pitted)
Freshly ground pepper
Salt

In a large frying pan, sauté the chicken with some of the olive oil until it gets a nice even color. After that, add the onion, garlic and peppers.

Add the dried herbs and pour in the wine. Once evaporated, add the sugar, tomatoes, tomato juice and the rest of the olive oil.

Simmer until the sauce thickens and finally add the olives, feta and remove from the fire.

In a large saucepan, boil 5 liters of water, add 35g of salt and boil the fettuccine for 8-11 minutes.

Serve the fettuccine on a plate, add the spicy chicken on top and finely chopped basil and parsley.
