The vineyards lie just a stone’s throw from the Atlantic Ocean, giving the wine remarkable freshness, crunchy red fruit character and a refreshing saline edge that sets it apart from any other Spanish red you’ve tasted. Rodrigo "Rodri" Méndez has deep roots in the region and is one of the most influential figures in Rías Baixas. His grandfather was among the pioneers behind the creation of the Rías Baixas DO appellation, but he also believed strongly in the region’s native red grape varieties and played a key role in preserving them. Another defining moment for Méndez’s red wines came with his meeting with Raúl Pérez, which led to a close collaboration and Pérez’s guidance in crafting reds. His goal is to produce wines that faithfully express both the grape varieties and the unique character of the region in every glass.

Goliardo Tintos del Mar Forjas del Salnes is the ultimate red expression of Rías Baixas, made from four grape varieties that are rarely found elsewhere: Caíño, Espadeiro, Loureiro Tinto and Sousón. The fruit comes from vineyards over 60 years old. Fermentation takes place with whole bunches and indigenous yeasts in stainless steel tanks. The wine is then aged for 12 months in old 225L and 500L barrels, as well as 1,500L foudres. The result is a red wine that preserves all the character of its grape varieties and birthplace, gently enhanced by the subtle touch of oak.

Tastes Like

On the nose, it bursts with aromas of lemon, citron, lime, lemon blossom, white peach, ginger and a subtle mineral touch.

On the palate, it’s medium to full-bodied, with sharp acidity and impressive concentration. Juicy peach, honeysuckle, beeswax, lemon and pineapple are layered with a long, saline and mineral finish — typical of the variety and the region.

PAIR IT

Pair it with seafood risotto with lemon zest, raw shellfish, or grilled chicken thighs marinated in honey, soy sauce and lime.

Salmon burger

  • 1/2 kg fresh salmon fillet without skin and bones
  • 1/3 cup of bread crumbs
  • 1 tbsp of Dijon mustard
  • 2 tbsps grated Parmesan cheese
  • 2 cloves of garlic, finely chopped
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 1/2 tsp. onion powder
  • 1/2 tsp. of paprika
  • 2 tbsps. barbecue sauce
  • 4 whole wheat bread rolls for burger

Chop the salmon into small pieces, put it in a bowl and mix it with your hands until it becomes somewhat homogenized.

Add all other ingredients except buns and mix well with a spoon until they are well mixed. Make 4 equal sized burgers.

Heat a pan (or grill) in medium to high heat and cook the salmon burgers by turning them until golden - about 3-4 minutes per side.

Remove from the fire, place the burgers on the rolls and serve with extra BBQ sauce, lettuce and onion.
