The inimitable finesse of both the variety and Saumur is perfectly reflected in the Guiberteau Saumur rouge 2021. If you’re seeking an intoxicatingly aromatic, floral red with silky tannins, you’ve found your perfect match!

The winery’s philosophy revolves around organic farming, hand-picking, minimal interventions, and minimal sulfites. Nestled in Saint-Just-sur-Dive, just south of the city of Saumur, the winery spans 42 hectares of vineyards, ranging in age from 5 to 80 years. The winery’s history dates back to 1934 when the family settled in the region and established the winery. Since 1996, Romain Guiberteau has been the “maestro of the winery.” The unique finesse and quality of their wines have opened the doors to renowned restaurants and wine bars worldwide, including the Noble Rot in London.

The 2021 vintage of Guiberteau Saumur rouge is made from 100% Cabernet Franc grapes grown in limestone soils, following the principles of organic farming. The grapes are hand-picked, and fermentation is done using indigenous yeasts. The wine ages for approximately six months in large conical barrels before being bottled.

Tastes Like

It has a medium ruby colour and an impressive nose, brimming with freshly picked berries, cherries, sour cherries, cranberries, violets, lavender, green pepper, and graphite. There are also hints of dried herbs, Earl Grey tea, cedar, and black pepper that add depth to the complex bouquet.

The mouthfeel is silky smooth, with a medium body, crisp acidity, and fine tannins. Juicy red and black forest fruits blend with herbs, purple flowers, and roasted pepper. It has long peppery finish.

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

 

 

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
