Charoula Red from Argatia Winery is a truly distinctive red wine, crafted from a unique blend that brings together three of Greece’s red “titans”: Xinomavro, Mavrodaphne, and Negoska. The combination of juicy red fruit with the earthy, herbal temperament of these native varieties makes it a wine suitable for every moment of the day.

Argatia Winery is a small, family‑run estate devoted to showcasing the indigenous grape varieties of Naoussa, with Xinomavro at the core of its philosophy. The winery was founded in 2004 by Panagiotis Georgiadis and Charoula Spinthiropoulou, two highly respected figures in Greek viticulture and oenology. Their commitment to organic cultivation, low yields, and minimal‑intervention winemaking is clearly reflected in every bottle they produce — including Charoula Red.

Charoula Red Argatia Winery comes from selected vineyards in Krasna Rodochori, Xerolakkos Rodochori, and Lakka Giannakochori. The blend consists of 70% Xinomavro, 15% Mavrodaphne, and 15% Negoska. Classic red vinification and maturation in stainless steel tanks help preserve the purity, freshness, and vibrant fruit character of the wine.

Tastes Like

On the nose, it is expressive and irresistible, with aromas of ripe strawberry, fig, plum, and hints of sun‑dried tomato that are complemented by hints of leather, cocoa, liquorice, and dried herbs.

On the palate, it is medium‑bodied, with high yet harmonious acidity and moderate tannins. Flavours of strawberry, fig, tomato, bay leaf, and allspice are framed by subtle notes of coffee and tea leaves, adding depth and a warm, earthy dimension.

Pair it with spaghetti Bolognese, soutzoukakia (Greek meatballs in tomato sauce), pasta with sausage, cherry tomatoes, graviera cheese, and peppers.

Wild boar casserole with tagliatelle pasta

  • 1 kilogram of wild boar
  • 1 carrot coarsely chopped
  • 1 celery coarsely chopped
  • 1/2 bunch of fresh onions finely chopped
  • 1/2 bunch of parsley finely chopped
  • 2 cloves of garlic
  • 3 tbsps. of mustard
  • 3 tbsps. of lemon juice
  • 5 allspice berries
  • 1 bay leaf
  • Salt and pepper
  • 200 g olive oil
  • 250 ml red wine (preferably xinomavro)
  • 500 g of tagliatelle

 

Cut the wild boar in portions. Put all the ingredients in a bowl, except olive oil and pasta. Marinate for at least 12 hours.

When we are ready for cooking, remove the boar from the marinade, drain it to leave the many liquids and sauté with the oil until it gets golden-brown. Add the marinade and lower the heat to simmer for 30 minutes.

Transfer them all to the casserole and put it in a preheated oven, at 150 ° C. Stir regularly to keep liquids from sticking. If more liquids are needed, add some vegetable broth.

Boil the pasta according to the instructions (preferably al dente).

Garnish with a little chopped parsley over the plate.
