Why do we love it?

Panos Jimas is back with the very limited production Jack of Spades Day 15 Jima Winery, which has a very serious chance of being your next favorite red wine. From the Greek, not so recognizable variety, Vlachiko, with the well-known care and temperament of Panos, this fine red wine was born and it will captivate you with its juice and its beautiful label.

Panos Tzimas, oenologist chemist, WSET Diploma graduate, is a guy full of unpredictable ideas that shake up the Greek wine scene every time. Here we are in Zitsa of Ioannina, at an altitude of around 600-700 meters, next to the river Arachthos. On steep slopes and low temperatures, a few acres are cultivated with Vlachiko, which seems to love these conditions. On the initiative of Panos Tzimas, a new project was born. "Les Vignerons" is about his collaboration with local winegrowers to express together, the multifaceted character of each vintage, variety and vineyard.

The Vlachiko for Jack of Spades 2022 Jima Winery comes from vineyards in Sakellariko, with Mrs. Vasso (Vasso Tori, philologist) responsible for their care and cultivation. You will rarely come across a single varietal 100% Vlachiko, since it does not easily fit into molds. The very careful vinification and the technical mastery of Panos, combined with staying for 11 months in oak barrels, gave a red wine with a sophisticated finesse and an impressive development in the mouth, since every second unfolds something new.

If you want to follow our example, grab as many bottles as you can of the limited number produced. It has a long, beautiful way ahead of it.

Tastes Like

It has a ruby color and an impressive nose with fresh red fruits standing out. Aromas of cranberry, cherry, plum and violet, while as the time passes the date, dried fig and licorice emerge.

Medium body, with high acidity and soft well-worked tannins. Aftertaste of sweet spices and dried fruits.

Pairs very well with red sauce pasta with fried eggplant and spices, Bolognese, grilled eggplant

Spaghetti with meatballs

  • 1 slice of whole wheat bread, cut into chunks
  • 225 grams of counterfeit
  • 1 medium onion, finely chopped
  • 1 portobello mushroom, finely chopped, after removing the stalk
  • 3 cloves of garlic, finely chopped
  • 3 tbsps. of fresh parsley leaves
  • 1 large egg white
  • Salt and freshly ground black pepper
  • Fresh grated nutmeg
  • 2 tbsps. of olive oil
  • 700 g peeled tomatoes in juice, hand-melted
  • 120 ml of beef stock
  • 1 bunch of fresh basil
  • 3 sprigs of fresh thyme
  • 225 g spaghetti
  • Parmesan, for serving, optional

Chop the bread into thick breadcrumbs. Place them in a bowl, add minced meat, 3 tablespoons of onion, finely chopped mushroom, 1 tablespoon of garlic, parsley, and egg white. Add salt, pepper and nutmeg. Mix well, until you get a homogeneous mixture. Divide into, approximately,  20 round meatballs and place them on a plate.

Put the pan on moderate heat and heat up some olive oil. Add the rest of the garlic and onion. Cook them for about 10 to 12 minutes by stirring occasionally until they are softened. Mix tomatoes and broth. Add basil and thyme into sprigs so they can be removed afterwards. Let it simmer for 20  minutes, by stirring occasionally. Add the meatballs and simmer, without stirring for about 10 minutes. Turn the meatballs and leave them for another 10 minutes.

Meanwhile, cook the pasta according to the package instructions in salted water. Serve the pasta by adding sauce, meatballs and as much parmesan as you like. Sprinkle with chopped parsley.
