Why do we love it?

Yes, it's a boy! ... And it's ... a Rooster! Cuccuvaia now has a baby brother! Kokoras 2014 Domaine San Gabriel Archangelo, of our favorite exuberant Greek producer from Tuscany, Stavros Tsoukas, is finally here. From the same varietal and from the same vineyard as Cuccuvaia, but without any oak, the Kokoras 2014 stands out and impresses with its freshness and the unexpected complexity. 

Insisting in the kingdom of the birds, and the biodynamic cultivation and natural winemaking, "il Greco" Stavros Tsoukas, excels in the heart of the Montecucco DOCG zone in Cinigiano municipality in the Maremma region of Tuscany. He continues to produce excellent wines that are the secret cult of the region.

The Sangiovese, Tuscany’s flagship variety proves that besides great aged wines, it can be used for the production of young, fresh red, very interesting wines.

The Kokoras is intended to be consumed within the next two - three years. Do not take too long.

Pale ruby ​​color in the glass, indicative of natural winemaking.

Not at all shy nose, it impresses from the outset with its fruity, complex structure. Plum, strawberry and cherry impress initially, with earthy aromas gaining ground as it breathes. Damp earth, mushroom and wet leaves are combined with freshly brewed coffee, leather and hints of tomato paste and olive. Cocoa and mineral notes complement the complex aromatic bouquet.

Mouth full of intensity, with medium+ body which balances nicely with the moderate acidity and noticeable but juicy tannins. Strawberry, cherry, mushroom and olive stand out and remain on the palate in the long-lasting aftertaste.

Combine with pasta Carbonara, Chicken Cacciatore, pizza with prosciutto and arugula

Pizza with prosciutto and arugula

  • 1/2 cup tomato sauce
  • 1 tsp. of grated red pepper
  • 1/4 tsp. oregano
  • 2 tbsps. of olive oil
  • 1 ball of pizza dough, flattened
  • 3/4 cup mozzarella, grated
  • 4 slices of prosciutto, cut into four
  • 1/4 cup mushrooms cut into slices
  • 1/2 small red onion, sliced ​​thinly
  • 1-2 tbsps. Parmesan cheese, grated
  • 1 cup of rocket

Preheat the oven to 200oC.

In a bowl, mix tomato sauce, oregano and red pepper. Apply the mixture over the flattened pizza dough. Cover with the half grated mozzarella.

Spread prosciutto, mushrooms and onion evenly and sprinkle with the rest of the mozzarella.

Brush the dough crust with olive oil and sprinkle with the grated parmesan cheese.

Place the pizza on baking paper sheet and bake until the cheese gets a golden color, about 10 to 12 minutes.

While the pizza is in the oven, put the rocket, 1 tablespoon of olive oil and a little salt in a small bowl and mix it up.

Remove the pizza from the oven. Let it cool for 5 minutes and then apply the rocket mix. Cut the pizza and serve it warm or at room temperature.
