Kotsifali Single Vineyard “Livades” from Karavitakis Vineyards is without a doubt one of the most refined and juicy red wines of Crete, placing Kotsifali rightfully on its throne. This demanding red variety, when handled with skill, proves that it can truly shine and reveal a side of itself we never knew existed.

Nikos Karavitakis, driven by a desire to explore the potential of Cretan grape varieties—and Kotsifali in particular—began experimenting with old vines and single‑varietal vinifications. Kotsifali Single Vineyard “Livades” may be the most distinctive Cretan wine we’ve tasted to date, as it highlights the elegant side of the variety—a side reminiscent of Pinot Noir. This is thanks to vines over 50 years old, which deliver concentrated fruit, and to the minimal‑intervention winemaking that includes ambient yeasts and aging for 10 months in used 500‑liter Stockinger barrels.

Tastes Like

Kotsifali Single Vineyard “Livades” shows a vibrant ruby color and expressive aromas of red fruits such as strawberry, raspberry, cherry, and pomegranate. In the background, you’ll find herbal notes like thyme and lavender, along with hints of green tea.

On the palate, it has medium body, lively acidity, and silky tannins. Juicy and crunchy red fruits intertwine with notes of cinnamon and green tea, creating a beautifully balanced and elegant profile.

In Karavitakis Winery, located in Chaniamain effort is to produce wines with all the typical characteristics of each cultivated grape variety, and every wine to obtain elements that will show the diversity of the terroir. This is achieved due to the excellent location of the vineyards that combines mild altitude with proximity to the sea. Continuous experimentation with new varieties and techniques characterizes the philosophy of the winery, which in combination with the love for tradition, give us unique results.

PAIR IT

Pair it with tuna fillet with caponata, spaghetti with napolitana sauce, braised chicken with tomato sauce olives and peppers.

Rigatoni with tomato, pancetta and goat cheese

  • 4 mature tomatoes of medium size
  • Olive oil
  • Salt according to your preferences
  • Freshly ground pepper
  • ½ cup chopped pancetta
  • 150 gr goat cheese cut into cubes
  • 500 gr rigatoni
  • Parsley leaves for serving

 

Preheat the oven to 180 ° C.

Cut the tomatoes in slices and spread them on a pan. Season them with olive oil, salt (at will) and spread the chopped pancetta all over the pan.

Bake in the oven for about 20 minutes until the tomatoes soften. Place the pieces of goat cheese on each tomato and turn up the heat at 250 o C. Bake for about 10 more minutes until the pancetta becomes crisp and the cheese gets a golden color.

Boil the rigatoni according to the instructions of the packaging (al dente) and drain well. Place them in a large serving bowl, add some olive oil and mix them so they do not stick together. With a spoon, put half the tomatoes with the melted cheese and the pancetta over the macaroni, add a little olive oil and stir with the rigatoni until the tomatoes are dissolved and mixed with the whole.

For serving, add the remaining tomatoes with the melted cheese and pancetta on the side of each dish. Sprinkle with freshly ground pepper and add parsley leaves.
