The family winery El Porvenir de Cafayate has been in Cafayate, Salta for 20 years and makes unique wines, from high altitudes, that combine juicy and ripe fruit, with sharp acidity! The microclimate of Cafayate uniquely suited the southern French variety and produced a full-bodied wine, velvety tannic, and highly enjoyable, capable of aging for 10+ years. Now imagine what that means for a magnum bottle!

Laborium Malbec El Porvenir de Cafayate, is a Malbec grown at an altitude of 1700 meters, in the vineyard of the same name and this is one of the highest altitudes, where grapes are grown, around the world! The combination of bright sunlight, cool nights, and well-drained soils provide the ultimate conditions for Malbec to fully mature resulting in a wine that is rich, complex, full of character, and ripe fruit. Fermentation lasted 15 days, followed by malolactic fermentation in oak barrels which added extra complexity. Then aging for 1 full year in new French and American barrels gave the final touch of elegance and depth with a special and spicy character.

Tastes Like

In the glass, it is a deep ruby. Rich aromas of ripe blackberries, plums, black cherries, and blueberries, with notes of eucalyptus, lavender, cedar, black pepper, chocolate, and anise.

In the mouth, it is full of well-formed tannins and balanced acidity. Juicy fruit, mainly blackberry in a spicier frame than the nose, with pepper, cinnamon, tobacco, chocolate, and vanilla dominating.

PAIR IT

Pair it with ossobuko, stable steak, and pot roast beef with spices, but also with aged yellow cheeses.

Roasted duck

1 duck, about 3 kg
1 kg of potatoes, peeled, cut into large pieces 
4 onions, chopped
50g of duck fat
2 cloves garlic, finely chopped
1 tablespoon chopped sage
2 lemon zest

Preheat the oven to 220 ° C.

Season the duck with salt and pepper in the cavity.

Boil the potatoes in salted water until soft, then drain them well and mush them. Fry the onions in duck fat until they get a golden brown colour. Add the garlic to the potato puree and mix with sage, lemon zest and pepper. Put the mixture in the duck's cavity. Put the duck on a spacious baking tray in the middle of the oven. Bake for 30 minutes in 220 ° C.
Then, lower the temperature to 180 C or 160 C and roast the dusk for 2 ½ hours.
When the duck is cooked, remove it from the oven and leave it to rest for 15 minutes.
We recommend serving it with red cabbage and baked potatoes.
